Delicious lasagna with beef, zucchini, and three cheeses.
Ingredients:
  • 1 (16 ounce) package lasagna noodles
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 tablespoon Italian seasoning
  • 4 cups ricotta cheese
  • 1 cup grated Romano cheese
  • 2.5 cups spaghetti sauce
  • 1.5 cups shredded mozzarella cheese
  • 2 medium zucchini, sliced
  • 1 cup fresh basil leaves
Instructions:
  • Bring a large pot of water to a rapid boil and cook lasagna noodles for 6 to 8 minutes until al dente. Drain, rinse with cold water, and pat dry with a paper towel.
  • Brown ground beef in a skillet over medium-high heat. Add onion, salt, pepper, and Italian seasoning. Cook until beef is no longer pink. Drain excess liquids and set aside.
  • Combine creamy ricotta cheese, flavorful Romano cheese, 2 cups of spaghetti sauce, and seasoned ground beef in a large bowl, ensuring all ingredients are beautifully melded together. As your kitchen fills with tempting aromas, preheat your oven to 375 degrees F (190 degrees C) in anticipation of the flavorful masterpiece to come.
  • Spread a thin layer of spaghetti sauce in a 9x13 inch baking dish. Layer noodles lengthwise and a few in the opposite direction. Pour a generous layer of ricotta mixture over noodles. Top with basil leaves. Add another layer of noodles lengthwise. Sprinkle 1 cup of mozzarella cheese on top. Arrange zucchini slices over the cheese. Add a thin layer of ricotta. Add the last layer of noodles lengthwise. Finish with the remaining spaghetti sauce, basil leaves, and 1/2 cup mozzarella cheese.
  • Bake in a preheated oven for 50 to 55 minutes, covering with foil if Mozzarella cheese browns too much.
