Create a delicious chargrilled chicken with corn and avocado salsa in just 15 minutes.
Ingredients:
  • 4 small Australian Chicken Breast Fillets
  • 20.00 gm Cajun seasoning
  • 2 corn cobs, husks and silks removed
  • 1 avocado, stoned, peeled, finely chopped
  • 1 tomato, finely chopped
  • 1 small red onion, finely chopped
  • 1 long green chilli, thinly sliced (optional)
  • 1 lime, juiced
  • 450g pkt microwavable long-grain rice
  • 400g can black beans, rinsed, drained
Instructions:
  • Make three deep cuts in the top of each chicken breast using a sharp knife, being careful not to cut all the way through. Transfer the chicken breasts to a bowl and mix with Cajun seasoning and oil until well combined.
  • Preheat a greased chargrill on high heat. Grill the chicken for 6 minutes on each side or until fully cooked. Place on a plate to serve.
  • Grill the corn for 10 minutes, or until charred, then cut off the kernels. Combine the corn with avocado, tomato, onion, optional chili, lime juice, and seasonings in a bowl. Mix everything together well.
  • Once the corn is cooking, prepare the rice according to the packet instructions. Mix the cooked rice with beans in a bowl and gently toss to combine. Divide the mixture among serving plates and garnish with chicken and avocado salsa. Enjoy!
