Try a quick and cozy chicken and pumpkin laksa for a comforting winter meal!
Ingredients:
  • 230g jar laksa paste
  • 20.00 ml ginger paste
  • 1l chicken stock
  • 500g Australian Chicken Thigh Fillets, coarsely chopped
  • 500g pkt Diced Butternut Pumpkin
  • 200g rice stick noodles
  • 400g can coconut milk
  • 1 bunch choy sum, trimmed, sliced
  • 80g bean sprout
  • 1 long red chilli, thinly sliced (optional)
Instructions:
  • - Heat a large, deep saucepan over medium-high heat. - Sauté laksa paste and ginger paste for 1 minute until fragrant. - Pour in the stock and bring to a simmer. - Add chicken and pumpkin, then simmer on medium-low heat for 10 minutes until chicken is cooked through and pumpkin is tender.
  • Place the noodles in a large heatproof bowl and cover with boiling water. Let sit for 5 minutes until softened. Drain thoroughly.
  • Combine the creamy coconut milk and vibrant choy sum with the flavorful stock. Stir gently until the choy sum softens and the mixture is gently warmed.
  • Distribute the noodles evenly among serving bowls. Top with the laksa, then garnish with bean sprouts and chili, if desired.
