15-minute Vietnamese-style chicken rolls

Whip up homemade Vietnamese chicken rolls in just 15 minutes.
Ingredients:
  • 60ml white vinegar
  • 1.20 gm salt
  • 1 carrot, peeled, cut into matchsticks
  • 4 Vietnamese Rolls (see notes)
  • 100g mayonnaise
  • 1 Lebanese cucumber, peeled into ribbons
  • 1/2 x 200g pkt Shredded Iceberg Lettuce
  • 1 Hot Roast Chicken, breast meat only, skin removed, shredded
  • 16 coriander sprigs
  • 2 spring onions, cut into matchsticks
  • 1 long red chilli, thinly sliced (optional)
  • Soy sauce, to drizzle (optional)
Instructions:
  • In a small saucepan over low heat, combine vinegar, sugar, salt, and 1 tablespoon of water. Stir and cook for 2-3 minutes until the sugar dissolves. Remove from heat and pour the mixture over the carrot in a heatproof bowl.
  • Using a serrated knife, gently split each roll lengthwise without cutting all the way through. Spread the cut sides of each roll with creamy mayonnaise and generously fill them with crisp cucumber slices and fresh lettuce leaves.
  • Remove the carrots from the vinegar mixture. Place the carrots, chicken, coriander, and spring onions on top of the lettuce. Finish with chilli and soy sauce, if desired.
