17-minute duck sliders with apple and fennel slaw

Easy and quick duck sliders, perfect for a no-fuss lunch.
Ingredients:
  • 450g pkt Roast Duck Legs
  • 1 tsp white vinegar
  • 13.60 gm maple syrup
  • 0.63 gm ground cinnamon
  • 1 small garlic clove, crushed
  • 12 small brioche hotdog rolls, halved, or small dinner rolls, split
  • Fresh coriander sprigs, to serve
  • Coleslaw dressing, extra, to serve
  • 1 small red apple, cored, cut into matchsticks
  • 1 baby fennel bulb, trimmed, very thinly sliced
  • 50g bought shredded carrot
  • 1/4 small green cabbage, finely shredded
  • 2 green shallots, thinly sliced
  • 42.40 gm coleslaw dressing
Instructions:
  • Heat the duck as per packet instructions. Shred the duck meat, removing skin and bones. Combine in a bowl with vinegar, maple syrup, cinnamon, and garlic. Mix well and season generously.
  • Combine the apple, fennel, carrot, cabbage, shallot, and dressing in a bowl to create the slaw.
  • Stuff the bread rolls with coleslaw, pile on the duck and coriander, and drizzle with more coleslaw dressing before serving.
