17-minute pearl couscous salad

Quick and delightful couscous salad, great for hosting.
Ingredients:
  • 250g pearl couscous
  • 400g can Chickpeas, drained, rinsed
  • 200g feta, coarsely chopped
  • 6 fresh dates, pitted, chopped
  • 1 small bunch fresh coriander, sprigs picked
  • 1/2 small bunch fresh mint, leaves picked
  • 80ml (1/3 cup) extra virgin olive oil
  • 42.00 gm fresh lemon juice
  • 75g pomegranate arils
Instructions:
  • In a large saucepan, simmer the couscous in boiling water for 8-10 minutes until al dente. Drain and rinse with cold water.
  • In a large bowl, mix together the chickpeas, feta, dates, fresh coriander, mint leaves, olive oil, and freshly squeezed lemon juice. Don't forget to season with salt and pepper to taste.
  • Combine couscous with chickpea mixture; mix thoroughly. Serve on a platter and sprinkle with pomegranate seeds.
