Fluffy Japanese cheesecake with cream cheese, eggs, and white chocolate - just 3 ingredients for an easy and decadent treat.
Ingredients:
  • 1 (4 ounce) bar white chocolate, chopped
  • 0.5 cup cream cheese, softened
  • 3 eggs, separated
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and line the base of a 9-inch springform pan with parchment paper.
  • Melt white chocolate in a double boiler, stirring often for about 5 minutes. Ensure no chocolate sticks to the sides. Let it cool a bit. Then, blend in cream cheese and egg yolks until smooth.
  • Using an electric mixer, whip the egg whites in a large glass, metal, or ceramic bowl until stiff peaks form. Gently fold in the cooled white chocolate mixture and transfer the mixture into the prepared springform pan.
  • Bake in the preheated oven at 350 degrees F for 15 minutes, then lower the temperature to 300 degrees F and bake for another 15 minutes. Let the cheesecake sit in the turned-off oven for an additional 15 minutes.
  • After baking, let the cheesecake cool at room temperature for 1 hour, then refrigerate for 3 hours before serving.
