Refreshing Lemon Cheesecake Mousse: Swirl lemon curd through creamy cheesecake mixture. Chill for an hour. Serve with biscuits for dipping or crumbled on top. Deliciously easy!
Ingredients:
  • 250g cream cheese, at room temperature, chopped
  • 220g (2/3 cup) bought lemon curd
  • 300ml thickened cream
Instructions:
  • Beat the cream cheese with electric beaters until almost smooth in a bowl. Mix in half of the lemon curd until smooth and well combined. In a separate bowl, whip the cream until firm peaks form, then gently fold it into the cream cheese mixture until fully combined.
  • Layer flavors by adding 2 tbsp of lemon curd to one side of a piping bag with a 1.5cm plain nozzle. Follow by spooning half of the cream cheese mixture on the other side. Seal the bag, then pipe into four small serving glasses. Repeat for the remaining curd and cream cheese mixture, filling a total of eight small serving glasses.
  • Chill in the fridge for a minimum of 1 hour (or up to 4 hours) until the mixture slightly firms. Serve and enjoy.
