3-ingredient apricot jam: apricots, lemon juice, sugar. Perfect spread for flavorful toast!
Ingredients:
  • 8 cups fresh apricots - peeled, pitted, and crushed
  • 0.25 cup lemon juice
  • 6 cups white sugar
Instructions:
  • In a large pot over medium heat, combine apricots and lemon juice, then add sugar and bring to a gentle boil, stirring until sugar dissolves. Cook and stir until the apricot mixture thickens, about 25 minutes. Skim off any foam from the top if needed before removing from heat.
  • Clean and sterilize jars, lids, and rings by running them through the dishwasher or boiling them in water. Keep lids in hot water until ready to seal jars.
  • Carefully pour the warm jam into clean, sterilized jars, leaving a 1/4 inch space. Remove air bubbles by running a knife or spatula along the inside of the filled jars. Clean the jar rims with a damp paper towel to ensure a proper seal. Seal with lids and rings securely.
  • Fill a large stockpot halfway with water and bring it to a boil. Using a holder, carefully lower the jars onto the rack, leaving a 2-inch space between each jar. Ensure the water level is at least 1 inch above the tops of the jars by pouring in more boiling water if needed. Cover the pot, bring the water to a full boil, and process for 15 minutes.
  • Take the jars out of the stockpot and place them on a cloth-covered or wood surface, spaced several inches apart, to cool. Once cooled, press the lid of each jar with your finger to confirm a tight seal. Store in a cool, dark place.
