Indulge in a decadent apricot jam cake with layers of sweet, sticky goodness.
Ingredients:
  • 0.5 teaspoon baking soda
  • 1 cup unsalted butter, softened
  • 2 cups white sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 (12 ounce) jar apricot preserves
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) while preparing a 12-cup fluted tube pan by greasing and flouring it.
  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  • In a mixing bowl, cream butter using an electric mixer until smooth. Slowly add sugar and beat until the mixture becomes light and fluffy, which should take about 5 to 7 minutes. Incorporate eggs one by one, ensuring each is well blended before adding the next. Add the flour mixture in three portions, alternating with sour cream, and briefly beat the batter on low speed after each addition.
  • Divide the batter in half and pour one portion into the prepared pan. Spoon half of the apricot preserves on top, spreading it to within 1/2 inch of the edges. Repeat with the remaining batter and preserves.
  • Bake for 55 to 60 minutes until a toothpick comes out clean. Allow to cool in the pan for 15 minutes, then gently run a knife around the edges and carefully invert onto a platter.
