Easy Christmas cake

Create a festive Christmas cake in 5 easy steps.
Ingredients:
  • Melted slightly salted butter, to grease
  • 800g dried mixed fruit
  • 410g jar fruit mince
  • 20.00 ml finely grated orange rind
  • 125ml orange juice
  • 80ml brandy
  • 250g Unsalted Butter, melted, cooled
  • 200g brown sugar
  • 300g plain flour
  • 150g self-raising flour
  • 6.25 gm mixed spice
  • 4 eggs, lightly whisked
  • 160g almond
  • 40.00 ml apricot jam, warmed
Instructions:
  • Preheat your oven to 150°C. Grease a 22cm round cake pan generously with melted butter and line both the base and sides with three layers of non-stick baking paper, making sure they extend 5cm above the edge for easy lifting.
  • In a large saucepan over medium low heat, mix the dried fruit, fruit mince, orange rind, and orange juice. Stir constantly for 10 minutes until the fruits soften. Take off the heat and let it cool for 30 minutes. Stir in the brandy until well combined.
  • Mix butter and sugar with the fruit, then add the combined flours and mixed spice. Stir in the eggs until well combined. Transfer the mixture into the prepared pan, smooth the top, gently tap the pan on the counter to settle the batter, and finally, arrange the almonds on top of the cake.
  • After baking for 3 hours 15 minutes or until a skewer comes out clean, protect the cake from over-browning with foil if needed. Brush hot cake with apricot jam, then cover with foil. Wrap the cake in a large tea towel and let it cool overnight.
  • Present the cake on a serving platter for serving.
