Easy traditional christmas cake

"Prepare this festive fruit cake ahead of time for a perfect addition to your Christmas celebration!"
Ingredients:
  • 160g sultana
  • 280g currants
  • 225g raisins
  • 85g mixed peel
  • 200g glace cherry
  • 250ml rum
  • 250g butter, softened
  • 220g brown sugar
  • 4 free range eggs
  • 210g almond
  • 110g plain flour
  • 110g self-raising flour
  • 2.50 gm mixed spice
  • 1 tsp nutmeg ground
  • 5.00 gm cinnamon ground
  • Icing sugar, to dust
Instructions:
  • In a large bowl, mix sultanas, currants, raisins, mixed peel, glacé cherries, and rum. Cover and let it sit for 2 days, stirring occasionally to infuse the flavors.
  • Preheat your oven to 170C. Grease and line your 23cm square or 25cm round cake pan with three layers of baking paper, making sure to extend the paper 5cm above the rim.
  • With an electric mixer, whip the butter and sugar for 5 minutes until light and fluffy. Gradually add in the eggs one at a time, making sure to mix well after each addition.
  • Gently fold the almonds into the fruity mixture. Combine the fruit mixture with the buttery mix, sifted flours, and spices. Mix thoroughly. Transfer the batter into the pan. Bake for 2 hours or until a skewer comes out clean. Once baked, let it cool in the pan wrapped in a tea towel. Unmold the cake and dust it with icing sugar before serving.
