Freeze-ahead Christmas fruitcakes for easy holiday prep.
Ingredients:
  • 850g mixed dried fruit
  • 80ml (1/3 cup) Drambuie
  • 45g (1/4 cup, lightly packed) brown sugar
  • 1 x 120g can baby apple (Heinz brand)
  • 2 eggs, lightly whisked
  • 1 egg white
  • 115g (3/4 cup) plain flour
  • 40g (1/4 cup) self-raising flour
  • 2.50 gm mixed spice
Instructions:
  • Preheat your oven to 150°C. Arrange eight 250ml (1-cup) straight-sided paper muffin cases on a baking tray.
  • In a bowl, mix dried fruit and 60ml (1/4 cup) of Drambuie. Cover and let it sit for 4 hours to enhance the flavors.
  • Combine sugar, apple, egg, and egg white in a bowl and stir well. Add the combined flours and mixed spice, then stir until fully combined. Spoon the mixture into muffin cases and bake in the oven for 40 minutes or until a skewer inserted into the centers comes out clean. Brush the cakes with the remaining Drambuie and transfer to a wire rack to cool.
