Apricot jam bars with almond flour for a nutty flavor and rustic texture.
Ingredients:
  • 1 stick butter
  • 0.5 cup white sugar
  • 1 large egg
  • 0.5 teaspoon almond extract
  • 0.5 teaspoon vanilla extract
  • 0.5 cup almond flour
  • 1 teaspoon baking powder
  • 1.25 cups apricot jam, or as needed
Instructions:
  • Preheat the oven to 400°F (200°C) and line an 8x8-inch baking dish with parchment paper.
  • In a bowl, cream together butter and caster sugar until smooth, then mix in egg, almond extract, and vanilla extract.
  • In a bowl, combine flour, almond flour, baking powder, and salt. Mix the dry ingredients into the butter until a smooth dough forms.
  • Take half of the dough and press it into the baking dish. Spread apricot jam evenly over the dough. Drop the remaining dough in small spoonfuls over the jam.
  • Bake in the preheated oven for 25 minutes until golden. Let it cool before slicing into squares and serving.
