Apricot ginger oat bars with a jam filling, made with almond meal and gluten-free flour.
Ingredients:
  • 1 cup gluten-free all-purpose flour
  • 0.5 cup almond meal
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup gluten-free rolled oats
  • 0.5 cup packed light brown sugar
  • 0.5 cup white sugar
  • 0.5 cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 0.25 teaspoon almond extract
  • 0.33333334326744 cup white sugar
  • 1 tablespoon cornstarch
  • 2 cups pitted and diced apricots
  • 1 tablespoon diced fresh ginger
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch baking dish, line it with parchment paper, and grease the parchment paper.
  • In a bowl, combine flour, almond meal, baking soda, and salt. Add oats, brown sugar, and 1/2 cup white sugar, whisk to mix and break up any clumps of brown sugar. Pour in melted butter, vanilla extract, and almond extract; stir with a spatula until just combined.
  • Evenly press 2/3 of the flour mixture into the bottom of the baking dish to create a delicious crust.
  • Combine 1/3 cup white sugar and cornstarch in a small bowl, mix well. Add apricots and ginger, toss until coated.
  • Spread the luscious apricot mixture evenly over the buttery crust, then generously sprinkle the remaining third of the flavorful flour mixture on top.
  • Bake in the preheated oven for 35-40 minutes until the top is golden brown, the filling is bubbling, and cool completely for about 25 minutes before cutting into bars.
