Effortless pancake mix hack for a convenient, delicious cake ready in just 25 minutes!
Ingredients:
  • 375g bottle pancake shake mix
  • 160g (1/2 cup) lemon curd
  • 120g (1/2 cup) smooth ricotta (from a tub)
Instructions:
  • Preheat your oven to 190C (170C fan forced) and position one shelf in the center. Grease a 2.5cm-deep, 23 x 28cm baking tray.
  • Follow the instructions on the pancake mix packet and pour it into the prepared tray. Spread lemon curd over the pancake mixture. Mix 1-2 tablespoons of water with the ricotta until smooth. Spoon ricotta over the lemon curd. Swirl lemon curd and ricotta gently with a knife or skewer.
  • Bake on the middle shelf until fully set, approximately 20 minutes. Take out of the oven.
  • Preheat oven grill on high until golden on top, about 1-2 minutes. Serve hot.
