3-Layer Cake In the Microwave

Impress with a quick and easy homemade 3-layer microwave cake in just 10 minutes.
Ingredients:
  • For the cake layers
  • 1 cup (227g) unsalted butter, melted and cooled
  • 2 cups (400g) sugar
  • 2 large eggs
  • 2 cups (480ml) whole milk
  • 1 tablespoon vanilla extract
  • 3 cups (360g) all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the buttercream frosting
  • 1 1/2 cups (341g) unsalted butter, at room temperature
  • 6 cups (680g) powdered sugar
  • 1/3 cup (80ml) whole milk
  • 1 teaspoon vanilla extract
  • Rainbow sprinkles, for decorating
Instructions:
  • In a large mixing bowl, blend the melted butter, sugar, eggs, milk, and vanilla extract until smooth to create the wet mixture.
  • Combine the flour, baking powder, baking soda, and salt in a bowl, then gently fold with a spatula until just mixed. Avoid overmixing; the batter should have a slightly loose consistency.
  • Distribute the batter evenly among three 8-inch round silicone cake pans, approximately 2 cups per pan. No need to grease the pans. Microwave each layer separately on full power for 3 minutes and 15 seconds. The cake should bounce back when gently pressed in the middle and the edges will slightly separate from the pan.
  • Allow the cakes to rest in the pans for 10 minutes. Gently invert them onto a wire rack for full cooling before adding frosting.
  • For the frosting, use a hand mixer to beat the butter in a large mixing bowl until smooth and satiny for about 2 minutes. Then, add the powdered sugar, milk, and vanilla extract. Continue beating on medium speed until the mixture is light and fluffy, which should take around 2 minutes.
  • To assemble the cake, place a cake layer on a large serving plate. Spread about 1 cup of frosting evenly over the layer using an offset spatula or butter knife. Repeat with remaining layers. Ensure the cake layers are centered and the top is level, adjusting gently if needed.
  • Finish the cake: Spread the remaining frosting generously over the top and sides of the cake. Use an offset spatula or the back of a knife to smooth the sides. Add sprinkles for a pop of color. Store the cake covered on the counter for up to 4 days or place individual slices on a plate with plastic wrap for freshness. To keep leftover slices moist, cover the exposed cake layers with parchment paper. Cheers to delicious baking!
