Delicious 3-layer cake with black walnut filling and icing, topped with chopped walnuts.
Ingredients:
  • 1 cup butter
  • 0.5 cup shortening
  • 1.5 cups packed brown sugar
  • 5 eggs
  • 3 cups sifted all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup chopped black walnuts
  • 1 (8 ounce) package cream cheese
  • 0.25 cup butter
  • 4 cups sifted confectioners' sugar
  • 0.5 cup chopped black walnuts
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and flour a 10-inch tube pan.
  • Cream together 1 cup butter, shortening, brown sugar, and white sugar in a large bowl until smooth. Beat in eggs one at a time. In a separate bowl, sift together flour, baking powder, and salt, then add to the mixture along with milk, alternating between the two. Stir in 1 teaspoon vanilla and 1 cup black walnuts. Pour batter into prepared pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 80-90 minutes. Let it cool before serving.
  • Combine cream cheese and 1/4 cup butter in a mixing bowl, cream together until smooth. Mix in confectioners' sugar and beat well. Add 1 teaspoon vanilla. Frost the cooled cake and sprinkle with 1/2 cup nuts.
