Celebrate with our patriotic Soda Floats featuring homemade ice cream, fresh strawberry and blueberry syrups.
Ingredients:
  • 1/2 cup fresh lemon juice
  • 1 tablespoon honey
  • 2 to 3 teaspoons grated lemon peel (1 medium)
  • 1 cup whole milk
  • 1 cup whipping cream
  • 2 cups fresh strawberries, chopped
  • 1 teaspoon fresh lemon juice
  • 2 cups fresh blueberries
  • Soda water
  • Whipped cream
  • Candy sprinkles
Instructions:
  • Combine sugar, lemon juice, honey, and lemon peel in a 2-quart saucepan. Heat over medium-high heat until sugar and honey are dissolved and mixture comes to a boil. Boil for 1 minute, then remove from heat and set aside.
  • Combine milk and cornstarch in a medium bowl, whisking until smooth. Stir in whipping cream. Transfer mixture to a saucepan with syrup and mix well. Over medium-high heat, stir constantly until it boils and thickens like pudding. Let it boil for 1 minute, then remove from heat.
  • Transfer the mixture into a heatproof bowl. Set up an ice bath in a clean sink or large bowl and place the bowl with the mixture in the ice bath. Beat the mixture until it feels cool, which should take about 10 to 15 minutes.
  • Simply follow the ice cream machine's instructions to churn the mixture. Transfer the ice cream into a freezer-safe container, seal it, and freeze for at least 2 hours until solid.
  • For the strawberry syrup: In a 2-quart saucepan, combine chopped strawberries with 1/2 cup sugar. Cook over medium-high heat until sugar dissolves, strawberries soften, and release their juices. Take off the heat, strain the mixture through a fine mesh strainer into a bowl. Stir in 1 teaspoon lemon juice and discard the seeds and solids. Allow the syrup to cool. For the blueberry syrup: Repeat the same process as above using blueberries, 1/2 cup sugar, and 1 teaspoon lemon juice.
  • Scoop plenty of ice cream into drinking glasses, drizzle with both syrups, add soda water, top with whipped cream and candy sprinkles, and sip through a playful straw for the best experience.
