4th of July pasta salad with tomatoes, blue cheese - a patriotic dish for the picnic table.
Ingredients:
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 cup crumbled blue cheese
  • 1.5 teaspoons milk
  • 0.5 teaspoon honey mustard
  • 0.5 teaspoon white vinegar
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon cayenne pepper
  • 2.5 cups penne pasta
  • 1 clove garlic, minced
  • 0.75 teaspoon minced fresh basil
  • 2.5 cups cauliflower florets
  • 2 cups halved cherry tomatoes
  • 0.5 cup chopped red bell pepper
  • 4 ounces mozzarella cheese, cut into 1-inch strips
  • 2 tablespoons grated Parmesan cheese
Instructions:
  • Combine mayonnaise, sour cream, blue cheese, milk, honey mustard, vinegar, salt, garlic powder, black pepper, and cayenne pepper in a bowl and whisk until smooth.
  • 1. Bring a large pot of lightly salted water to a rolling boil. Add penne and cook until al dente, about 11 minutes, stirring occasionally. Drain well and transfer to a serving bowl.
  • In a skillet over medium heat, sauté garlic and basil in olive oil until fragrant, about 3-4 minutes. Pour this aromatic mixture over cooked penne. Combine cauliflower, tomatoes, red bell pepper, mozzarella, green onion, and Parmesan with the pasta, ensuring everything is evenly coated. Chill in the refrigerator for an hour to let the flavors meld.
