"Tangy, savory kidney beans with preserved lemon and red chile for a flavor kick."
Ingredients:
  • 1 pound dried red kidney beans, rinsed
  • 2 quarts water
  • 1 Moroccan-style preserved lemon, or to taste
  • 1 tablespoon freshly ground black pepper
  • 1 small red chile pepper, halved lengthwise
  • 1 bay leaf
  • 1 teaspoon garlic powder
  • 1 teaspoon anise seed
Instructions:
  • In a large container, soak kidney beans in about 1 quart of water. Allow them to rest for 8 hours to overnight. Drain beans before using.
  • In a stockpot, mix together beans, 1 quart of water, preserved lemon, sugar, black pepper, red chile pepper, bay leaf, garlic powder, and anise seed. Bring to a boil, then simmer covered on low heat for 1 hour.
  • Discard lemon, bay leaf, and red chile pepper from the bean mixture. Gently mash roughly 10% of the beans along the stockpot's edge with the back of a spoon. Cover the stockpot and simmer for an additional 45 minutes.
  • Uncover the stockpot and continue simmering the beans until they thicken and the water evaporates, approximately 15 minutes.
