Satisfying veggie nachos with refried beans, jalapeño salsa, olives, and melted pepper Jack cheese make a delicious dinner for busy nights.
Ingredients:
  • 2 (15 ounce) cans fat-free refried beans
  • 1 (7.75 ounce) can jalapeno salsa (such as El Pato®)
  • 1 (12 ounce) bag tortilla chips
  • 1 (8 ounce) package shredded pepper Jack cheese
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 (8 ounce) package shredded lettuce
  • 1 (4 ounce) can sliced black olives
Instructions:
  • Preheat the broiler in the oven and position a rack about 6 inches below the heat source. Cover a rimmed baking sheet with aluminum foil.
  • In a saucepan over medium heat, mix refried beans and salsa together, stirring occasionally until fully blended and heated through, approximately 5 minutes.
  • Spread a layer of tortilla chips on the baking sheet. Top with refried beans, pepper Jack cheese, green bell pepper, and onion for a delicious combination.
  • Broil until the cheese is gooey and bubbly, about 3 to 5 minutes. Top with fresh lettuce and flavorful olives.
