Transform picky eaters into liver enthusiasts with this quick, tender liver and onions recipe soaked in milk.
Ingredients:
  • salt and pepper to taste
  • 2 pounds sliced beef liver
  • 1.5 cups milk, or as needed
  • 0.25 cup butter, divided
  • 2 large Vidalia onions, sliced into rings
  • 2 cups all-purpose flour, or as needed
Instructions:
  • Rinse liver slices under cold water, then pat dry. Place them in a dish and cover with milk. Let it sit as you prepare onions, or set aside for enhanced flavor if preferred.
  • In a large skillet over medium heat, melt 2 tablespoons of butter until sizzling. Add onion rings and cook until tender and soft, about 3 to 5 minutes. Transfer the caramelized onions to a bowl and set the skillet aside.
  • Spread a layer of seasoned flour on a plate. Drain milk from liver slices, then dredge them in the flour mixture.
  • In the same skillet, melt the remaining 2 tablespoons of butter over medium-high heat. Fry the coated liver slices until lightly browned, about 3 to 4 minutes per side. Add onions back to the skillet, reduce heat to medium, and cook until onions are heated through and liver is slightly pink inside, adjusting the time to your liking.
