Spicy turkey sausage and sweet brown sugar stuffed in winter squash shells.
Ingredients:
  • 2 acorn squash, halved and seeded
  • 2 tablespoons olive oil
  • 1.5 pounds spicy turkey sausage, casings removed
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a baking dish, lay the squash halves skin-side up with 1 inch of water and bake for about 45 minutes until the flesh is tender. In a large skillet over medium heat, sauté the sausage in olive oil until browned, breaking it into small pieces. Set aside.
  • When the squash halves are tender, drain the water. Sprinkle a generous amount of brown sugar into each squash half, saving 1/4 cup for later. Stuff the squash halves with the browned sausage, and sprinkle the reserved brown sugar on top. Place the squash back in the baking dish and bake until the sugar starts melting, around 15 minutes.
