Roasted acorn squash with a caramelized brown sugar and spice glaze, bursting with delicious flavor.
Ingredients:
  • 2 acorn squash
  • 0.5 cup brown sugar
  • 2 tablespoons unsalted butter
  • 1 teaspoon coarse sea salt
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon ground allspice
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C), then line a baking pan with aluminum foil and grease with vegetable oil.
  • Prepare the acorn squash by removing the stems, cutting them in half lengthwise, and scooping out the seeds. Then, place the squash halves cut side down on the baking pan.
  • Roast in the oven until tender, 30-60 minutes, depending on the squash size.
  • As the squash is roasting, combine brown sugar, butter, sea salt, cinnamon, and allspice in a small bowl. Heat in the microwave for about 30 seconds until the butter is melted, then stir to blend everything together.
  • Take the roasted squash out of the oven, flip it over, and generously coat it with the sugar mixture. Return it to the oven and roast for an additional 5 minutes.
