Roasted butternut squash, sweet potatoes, carrots, and green apple blended into a cozy winter soup.
Ingredients:
  • 1 butternut squash - peeled, seeded, and chopped
  • 3 carrots, peeled and chopped
  • 2 sweet potatoes, peeled and chopped
  • 1 green apple - cored, peeled, and chopped
  • 0.5 onion, chopped
  • 0.25 cup olive oil
  • 2 cups vegetable broth
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Spread a colorful mix of butternut squash, carrots, sweet potatoes, apple, and onion on a baking sheet, then generously drizzle with olive oil.
  • Bake in the preheated oven for 45 minutes until golden and tender. Puree vegetable mixture in a blender or food processor until silky smooth, then transfer to a large saucepan.
  • Combine vegetable broth with pureed vegetables, then generously season with coriander, turmeric, nutmeg, salt, and pepper. Simmer soup over low heat until warmed through, about 10 to 15 minutes.
