Vibrant rainbow carrots, perfectly roasted and glazed, make a stunning dinner accompaniment.
Ingredients:
  • 1 pound rainbow carrots
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1/2 teaspoon garlic salt
  • freshly ground black pepper to taste
  • chopped fresh rosemary (optional)
Instructions:
  • Preheat the oven to a toasty 425°F (220°C) and prepare a baking sheet with parchment paper.
  • Peel and slice carrots into uniform pieces for even cooking.
  • Spread out the carrots on the baking sheet, ensuring they are not crowded. Drizzle with olive oil and toss until well coated.
  • Roast carrots in the hot oven for 15 minutes.
  • Combine honey, garlic salt, and pepper in a small bowl. Drizzle the honey mixture over the roasted carrots and toss to coat. Return carrots to the oven and bake for an additional 5 to 10 minutes until they are tender and caramelized on the edges.
  • Transfer the carrots to a beautiful serving platter, generously sprinkle with fragrant rosemary, and serve immediately.
