Grilled Peach- and Mustard-Glazed Pork Tenderloin

Add some zing to lean meat with a healthy twist using fruit preserves and mustard from Betty Crocker cookbook.
Ingredients:
  • 1/2 cup peach preserves
  • 2 tablespoons Dijon mustard
  • 2 teaspoons olive or vegetable oil
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 2 pork tenderloins (about 3/4 lb each)
Instructions:
  • Combine marinade ingredients in a shallow glass or plastic dish or resealable freezer bag. Add pork and ensure it is coated with the marinade. Refrigerate for at least 1 hour, turning occasionally, or up to 8 hours.
  • Preheat your gas or charcoal grill. Take the pork out of the marinade and save the marinade. Put the pork on the grill over medium heat. Cover and grill for 20 to 25 minutes, occasionally brushing with marinade and flipping once, until the pork is slightly pink in the center and a meat thermometer reads 160°F.
  • In a small saucepan, bring the leftover marinade to a boil and cook while stirring for 1 minute. Slice the pork and serve it with the marinade.
