Grilling fruit intensifies flavor and natural sweetness.
Ingredients:
  • 135.00 gm firmly packed brown sugar
  • 2 large peaches, halved, stones removed
  • 4 large nectarines, halved, stones removed
  • 250g mascarpone cheese
  • 6.00 gm icing sugar mixture, sifted
  • 250.00 ml Vienna almonds, crushed (see note)
Instructions:
  • Preheat a greased chargrill pan over medium-high heat. Coat the cut side of the peaches and nectarines with brown sugar.
  • Cover the pan with a sheet of baking paper. Arrange the fruit, cut side down, on the paper. Cook for 3 to 5 minutes until nicely browned.
  • In a bowl, mix mascarpone, icing sugar, and almond. Serve the fruit with the mascarpone mixture.
