Grilled chicken with peach glaze, a sweet and tangy combination of fruit preserves, olive oil, garlic, soy sauce, and Dijon mustard.
Ingredients:
  • 8 skinless, boneless chicken breast halves
  • 1 pinch salt and ground black pepper to taste
  • 2 cups peach preserves
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon Dijon mustard
  • 4 ripe peaches, halved and pitted
Instructions:
  • Get that grill nice and warm over medium heat, oil up the grate nice and easy, then generously season your chicken breasts with salt and pepper.
  • Combine peach preserves, olive oil, soy sauce, garlic, and Dijon mustard in a bowl, mixing until fully incorporated. Season with salt and pepper. Set aside 1/2 cup of the peach sauce for basting the peaches.
  • Grill chicken until golden brown on one side for 6 to 7 minutes. Flip and cook for an additional 5 to 6 minutes. Brush both sides with peach sauce, then continue cooking until fully cooked and juices run clear, about 4 to 5 minutes. Check with a thermometer for a minimum internal temperature of 165°F (74°C).
  • Place the peach halves on the grill, cut-side down and grill for 2 minutes. Flip the peaches and brush with the reserved 1/2 cup peach sauce. Grill for an additional 3 to 4 minutes until peaches are tender.
