"Healthier pumpkin bread recipe with no oil and half sugar replaced by heat-stable sugar substitute."
Ingredients:
  • 1.5 cups raisins
  • 4.75 cups all-purpose flour
  • 4 cups white sugar
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons salt
  • 1.5 teaspoons nutmeg
  • 1.5 teaspoons cinnamon
  • 1.5 teaspoons ground cloves
  • 6 eggs
  • 1 (29 ounce) can pumpkin
  • 1 cup unsweetened applesauce
  • 1 cup chopped walnuts
Instructions:
  • Preheat the oven to 350 degrees F (175 C), and prepare three 12-cup muffin pans by greasing them or lining them with paper liners. Plump the raisins by soaking them in hot water for ten minutes, then drain.
  • Combine flour, sugar, baking powder, baking soda, salt, nutmeg, cinnamon, and ground cloves in a large bowl. In a separate bowl, whisk eggs, pumpkin, and applesauce until smooth. Gently fold wet ingredients into dry ingredients to make a smooth batter. Fold in raisins and walnuts. Scoop batter into muffin cups.
  • Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
