Candy-coated pumpkin seeds with pumpkin pie spice, sugar, and salt. Irresistibly addictive snack!
Ingredients:
  • 1 cup raw pumpkin seeds, rinsed and dried
  • 6 tablespoons white sugar, divided
  • 0.25 teaspoon salt
  • 0.5 teaspoon pumpkin pie spice
  • 1 tablespoon vegetable oil
Instructions:
  • Preheat the oven to 250 degrees F (120 degrees C). Arrange pumpkin seeds in a single layer on a baking sheet. Toast for 45 minutes, stirring occasionally, until golden and crispy. Adjust time for larger seeds if needed.
  • Combine 2 tablespoons of white sugar, salt, and pumpkin pie spice in a large bowl. In a large skillet over medium-high heat, heat the oil. Add pumpkin seeds and sprinkle the rest of the sugar over them. Stir with a wooden spoon until the sugar melts, approximately 45 seconds. Transfer seeds to the bowl with the spiced sugar and mix well. Let cool before serving. Store in an airtight container at room temperature.
