Savory African chicken stew with spicy peanut sauce and versatile vegetable mix. Perfect for creative cooks.
Ingredients:
  • 1 (3 pound) roasting chicken, deboned and cut into bite size pieces
  • 1 large potato, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, crushed
  • 1 teaspoon ground coriander seed
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon ground black pepper
  • 0.75 cup unsalted natural-style peanut butter
  • 1 (15 ounce) can chickpeas, drained and rinsed
Instructions:
  • In a large skillet, heat oil over medium-high heat. Brown chicken for 3 to 4 minutes, then transfer to a plate.
  • Place potato, onion, and garlic in the skillet. Lower the heat to medium-low and sauté for 2 to 3 minutes, being careful not to let the garlic brown too much. Mix in cumin, coriander, pepper flakes, salt, and black pepper, then add water. Introduce reserved chicken along with any juices and cover tightly. Let it simmer, stirring from time to time, for 10 to 15 minutes.
  • Blend peanut butter and garbanzo beans until smooth. Simmer covered until chicken is cooked and potatoes are tender, about 10 minutes. Adjust seasoning, then serve.
