Agua de Jamaica (Hibiscus Iced Tea)

Make a refreshing Agua de Jamaica with dried hibiscus flowers, a classic Mexican taqueria drink to enjoy at home.
Ingredients:
  • 2 quarts water
  • 3/4 to 1 cup sugar (depending on how sweet you would like it to be)
  • 1 cup dried hibiscus flowers
  • 1/2 cinnamon stick (optional)
  • A few thin slices ginger (optional)
  • Allspice berries (optional)
  • Lime juice (optional)
  • Orange or lime slices for garnish
Instructions:
  • In a medium saucepan, combine 4 cups of water with sugar. Add cinnamon, ginger slices, and allspice berries for extra flavor if desired. Bring to a boil until the sugar is fully dissolved.
  • Infuse with dried hibiscus flowers: Remove from heat, gently fold in the flowers with a spatula, cover, and allow to steep for 20 minutes.
  • Pour the mixture through a sieve into a pitcher, removing the hibiscus flowers, ginger, cinnamon, and/or allspice berries. (You can refrigerate the concentrate at this stage until you're ready to use it.)
  • Pour in the refreshing 4 cups of water, or for a faster chill, toss in some ice along with the water, into the concentrate, and refrigerate. For a carbonated twist, you can use ice and cold soda water instead. Enhance the flavor with a hint of lime juice. Serve over ice and garnish with a slice of orange or lime.
