Mexican-inspired chilled spicy shrimp dish marinated in lime and serrano, topped with red onions, avocado, and cucumber.
Ingredients:
  • 1 pound large shrimp - peeled, deveined and butterflied
  • 1.25 cups fresh squeezed lime juice
  • 4 fresh serrano chiles
  • 0.33333334326744 cup chopped fresh cilantro
  • 1.5 teaspoons salt, divided, or to taste
  • 1 small red onion, thinly sliced
  • 1 avocado - peeled, pitted, and sliced
  • 1 cucumber, sliced
Instructions:
  • Spread the shrimp evenly onto two shallow plates.
  • In a blender, combine lime juice, chiles, cilantro leaves and stems, and 1 teaspoon salt. Blend until smooth. Divide the mixture evenly over the plates of shrimp.
  • Chill in the fridge until shrimp turn opaque and white, for 15 to 25 minutes.
  • Garnish each plate with red onion and avocado. Arrange cucumber slices around the edges and finish with a sprinkle of remaining salt.
