Tangy lime and chili marinated shrimp atop crispy tortilla chips - a flavorful garlic shrimp aguachile appetizer.
Ingredients:
  • 1/2 cup packed cilantro leaves
  • 3 garlic cloves, sliced
  • 1/2 serrano chile, sliced, or to taste
  • 1/3 cup fresh lime juice, from 2 to 3 limes
  • 1/3 cup water
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon white sugar
Instructions:
  • Blend together fresh cilantro, garlic, spicy serrano chile, zesty lime juice, water, salt, pepper, and a touch of sweetness in a blender until velvety. Chill the aguachile as you prep the rest of the ingredients.
  • Combine shrimp, cucumber, and red onion in a bowl. Pour in the flavorful aguachile dressing. Mix everything thoroughly, ensuring the shrimp is fully coated. Cover and chill in the fridge for 30 minutes to 1 hour. Serve and enjoy!
  • Garnish the aguachile with sliced jalapenos and fresh cilantro, and serve alongside crispy tortilla chips.
