Flavorful and simple shrimp kabobs made with fresh lemon and basic ingredients.
Ingredients:
  • 0.25 cup olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons lemon juice
  • 0.25 teaspoon pepper
  • 1 pinch finely chopped parsley
  • 1 pound frozen shrimp, thawed and peeled
  • metal skewers
  • cooking spray
Instructions:
  • Combine olive oil, garlic, lemon juice, pepper, and parsley in a bowl, then transfer to a large resealable plastic bag. Add shrimp, coat with the marinade, remove excess air, and seal the bag. Refrigerate for 2 hours.
  • Preheat your outdoor grill to medium heat and lightly oil the grate. Lightly coat metal skewers with cooking spray.
  • Take the shrimp out of the marinade, letting any extra drip off. Dispose of the marinade that is left. Thread approximately 5 shrimp onto each skewer.
  • Grill shrimp until they turn bright pink on the outside and the meat is opaque, for about 5 minutes. Avoid overcooking.
