Elevate ahi tuna fish tacos with a zesty rub and fresh pineapple salsa for a burst of flavor.
Ingredients:
  • 2 tablespoons ground black pepper
  • 2 teaspoons salt
  • 2 teaspoons ground cumin
  • 2 teaspoons garlic powder
  • 1 pound ahi tuna steaks
  • 4 tablespoons fat-free sour cream
  • 4 (10 inch) flour tortillas, warmed
  • 0.5 whole fresh pineapple - peeled, cored, and diced
  • 0.5 medium red onion, diced
  • 2 tablespoons chopped fresh cilantro, or to taste
  • 2 tablespoons lime juice
  • 1 tablespoon crushed red pepper
  • 2 teaspoons grated lime zest
Instructions:
  • In a small bowl, blend black pepper, salt, cumin, garlic powder, and cinnamon. Massage mixture onto tuna steaks. Chill covered in the fridge for at least 15 minutes.
  • Combine pineapple, red onion, cilantro, lime juice, red pepper, and lime zest in a bowl, stirring until well mixed. Chill in the refrigerator until ready to serve.
  • Warm oil in a cast iron skillet over medium heat. Sear tuna steaks for 1 1/2 to 2 minutes on each side until cooked as desired. Use an instant-read thermometer to ensure they reach 140 degrees F (60 degrees C) for medium doneness. Slice the steaks thinly after removing from the skillet.
  • On each warmed tortilla, gently spread a layer of creamy sour cream. Layer on tender tuna slices, spoon on zesty pineapple salsa, then roll up carefully to secure all the delicious flavors inside.
