Delicious lemon cookies with tangy lemon icing - bake fresh or freeze dough for later!
Ingredients:
  • 0.5 cup unsalted butter, softened
  • 0.5 cup white sugar
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 1 large egg, at room temperature
  • 1 medium lemon, zested and juiced, divided
  • 1 teaspoon baking powder
  • 1.25 cups powdered sugar
  • 1 medium lemon, juiced
Instructions:
  • Combine butter, sugar, and pudding mix in a bowl until creamy. Mix in egg, lemon juice, and half of the lemon zest. Save the rest of the lemon zest for the icing later.
  • Combine flour, baking powder, and salt in a separate bowl. Mix into the butter-pudding mixture until fully incorporated. Shape dough into 2 logs, wrap in plastic, and freeze until firm for about 4 hours.
  • Preheat the air fryer to 325°F (165°C) and line the basket with parchment paper.
  • Cut frozen dough into thin 1/4-inch slices and arrange in the prepared basket.
  • Air fry the cookies in batches until the edges start to brown, for 6 to 10 minutes. Allow them to cool in the basket until they are no longer hot, then transfer to a wire rack to cool completely.
  • As the cookies bake, mix powdered sugar, lemon juice, and reserved lemon zest in a bowl. Dip one side of each cookie in the icing and allow it to set until hardened, approximately 2 minutes.
