Air fryer lemon puff bars recipe

Crispy puffed pastries filled with tangy lemon custard - just 5 simple ingredients for an easy and delicious treat!
Ingredients:
  • 160g (1/2 cup) bought lemon curd
  • 120g (1/2 cup) French Vanilla Double Thick Custard
  • 2 sheets frozen puff pastry, just thawed
  • Icing sugar, to dust
  • Finely grated lemon rind, to serve
Instructions:
  • Gently swirl the lemon curd and custard together in a bowl using a spatula until blended.
  • Cut the pastry sheet in half. Score a line down the centre of one half, then two crossways to create 6 rectangles. Fill each rectangle with 1 tablespoon of curd mixture using the scored lines as a guide.
  • Gently top the remaining pastry half over the custard, pressing with your finger to seal the edges. Cut into 6 rectangles to create 12 bars.
  • Spray the base of the air fryer basket with oil, then arrange 3-4 rectangles in the basket. Air fry at 180C for 5 minutes until crispy and golden. Flip the bars and cook for an additional 3 minutes. Transfer to a wire rack and continue with the remaining rectangles.
  • Sprinkle with icing sugar and lemon zest before serving.
