Air fryer vegetarian Christmas log recipe

Festive Christmas log with lemon ricotta filling, packed with veggies and made effortlessly in the air fryer.
Ingredients:
  • 1 brown onion, finely chopped
  • 2 tsp fresh thyme leaves
  • 500g frozen spinach, thawed, excess liquid squeezed
  • 300g fresh ricotta, crumbled
  • 180g haloumi, coarsely grated
  • 20.00 ml finely grated lemon rind
  • 2 eggs, plus 1 egg, lightly whisked
  • 2 ½ sheets frozen puff pastry, just thawed
  • Spicy tomato chutney, to serve
Instructions:
  • In a frying pan over medium heat, sauté onion, garlic, and thyme in oil for 5 minutes until the onion softens. Transfer the mixture to a large bowl.
  • Combine spinach, ricotta, halloumi, lemon zest, and 2 eggs with the onion mixture until fully mixed. Season to taste.
  • Lay out one sheet of pastry on a clean work surface. Spread half of the spinach mixture onto the pastry about 3cm from the edge nearest to you. Roll the spinach into a log and wrap the pastry around it, sealing the edges. Repeat with the second sheet of pastry and remaining spinach filling.
  • Brush the tops of the rolls with the lightly whisked egg. Use cookie cutters to cut out six 6cm stars and six 3cm stars from the remaining pastry. Place the stars on top of the logs and brush with more egg wash.
  • Preheat the air fryer to 180C for 3 minutes. Add rolls to the basket and air fry for 20 minutes until the pastry is golden and the filling is heated. Serve sliced with chutney.
