Elegant garlic butter mashed potato swirls can be prepared in advance, refrigerated, and baked later or reheated in the air fryer for a convenient and irresistible side dish.
Ingredients:
  • 800g Sebago (brushed) potatoes, peeled, coarsely chopped
  • 125g butter, chopped
  • 3 garlic cloves, crushed
  • 2 egg yolks
  • 20.00 ml finely chopped fresh continental parsley
  • 2 egg yolks, extra
Instructions:
  • Preheat your oven to 200C/180C fan forced. Lightly grease a large baking tray and line it with baking paper.
  • In a large saucepan, cover the potato with cold water and bring it to a boil over high heat. Simmer for 10 minutes or until the potato is very tender.
  • While the butter gently melts in a small saucepan over medium heat, introduce the garlic and sauté for 1 minute until fragrant. Remove from heat and set aside.
  • After draining the potato, cook it on high heat in the pan for 1 minute to remove excess liquid. Mash the potato until smooth, then press it through a sieve into a large bowl. Mix in half of the garlic butter, egg yolks, and parsley until well combined.
  • Put the potato mixture into a piping bag with a 1.5cm fluted nozzle. Pipe 16 potato rosettes onto the tray. Mix the extra egg yolks and 1 tablespoon of water in a small jug, then lightly brush over each rosette. Bake for 20 minutes until lightly browned.
  • Transfer to a elegant platter and reheat the leftover garlic butter. Luxuriously drizzle the warm garlic butter over the potatoes. Serve promptly.
