Air Fryer Vegetarian Cauliflower and Chickpea Tacos

Crispy air-fried cauliflower and chickpeas in tortillas with creamy cilantro sauce for a delicious vegetarian taco option.
Ingredients:
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon sea salt
  • 0.25 teaspoon garlic powder
  • 1 (15 ounce) can chickpeas, drained
  • 1 small head cauliflower, cut into bite-sized pieces
  • 1 cup sour cream (such as Daisy®)
  • 0.125 cup lime juice
  • 1 tablespoon Sriracha
  • salt to taste
  • 6 (6 inch) corn tortillas
Instructions:
  • Preheat the air fryer to 370°F (190°C).
  • Combine olive oil, lime juice, chili powder, cumin, salt, and garlic powder in a large bowl and whisk until well blended. Add chickpeas and cauliflower, then mix thoroughly until everything is evenly coated.
  • Combine sour cream, fresh cilantro, zesty lime juice, and spicy Sriracha in a bowl. Mix until well blended. Add salt to taste.
  • Transfer the cauliflower mixture into the air fryer basket. Air fry for 10 minutes, stir, then continue cooking for another 10 minutes. Stir again and air fry until crispy to your liking, approximately 5 minutes more.
  • Fill corn tortillas with the delicious cauliflower mixture and generously drizzle with the flavorful sauce.
