Air fryer vegetarian Korean eggplant recipe

Elevate your weeknight meal with Korean Sticky Chicken Meal Kit for a flavorful kick. Air fryer crispy eggplant with less oil for a healthier twist. A new family favorite in no time!
Ingredients:
  • 40g (1/4 cup) plain flour
  • 300g pkt Meal Kit Korean Sticky Chicken
  • 350g eggplant, cut into 5mm thick slices
  • Steamed long-grain rice, to serve
  • 350g pkt Asian style salad mix
  • 1 green shallot, thinly sliced
Instructions:
  • Start by elegantly arranging the flour on a plate. Take a luxurious moment to beat the egg in a bowl. Lay out the delectable Taste seasoning mix on a plate. Gently coat each slice of eggplant in the flour, ensuring to remove any excess. Dip the coated eggplant in the egg and then the seasoning mix for an irresistible finish. Gracefully transfer the prepared slices to a plate.
  • Lightly oil the air fryer basket. Arrange the eggplant slices in a single layer, spraying them with oil. Air fry at 180C for 10 minutes. Flip the eggplant, spray with more oil, and air fry for another 5 minutes until golden and crispy.
  • Microwave the Taste sauce mix in a large microwave-safe bowl on High for 1 minute or until warm.
  • Spoon the rice and Asian salad mix into individual serving bowls. Add the eggplant on top and generously drizzle with sauce. Finish off with a sprinkle of shallot before serving.
