Air-fryer oat cookies

Ingredients:
  • 85 g unsalted butter
  • 20 g golden syrup
  • ½ a lemon
  • 140 g self-raising flour
  • 100 g porridge oats
  • 100 g golden caster sugar
  • 1 level teaspoon ground cinnamon
  • ½ teaspoon bicarbonate of soda
  • 50 g sultanas
Instructions:
  • Gently melt butter and golden syrup on the stove or in the microwave. Grate lemon zest into a mixing bowl and add other ingredients. Pour in the melted butter mixture, stir well, and add 1 tablespoon of water. Divide the mixture into 3 parts and form 5 balls from each. Flatten them slightly. You can freeze them at this point. Place in the air fryer with space in between, cook in batches for 15 minutes at 175°C. Let them cool for 5 minutes before transferring to a wire rack. Repeat with the remaining dough.
