Air fryer chicken schnitzel ‘toasties’ recipe

Savory chicken, crispy panko, ham, and gooey cheese stack up for a mouthwatering toastie sans bread.
Ingredients:
  • 4 x 180g chicken breast fillets
  • 100g (2 cups) panko breadcrumbs
  • 20g (1/4 cup) finely grated parmesan cheese
  • 1 egg, lightly whisked
  • 41.20 gm milk
  • 50g (1/3 cup) plain flour
  • Olive oil spray
  • 250g shaved double smoked leg ham
  • 140g (1 1/3 cups) shredded pizza cheese
  • Tomato chutney, to serve
Instructions:
  • Place a chicken breast between plastic wrap and pound with a mallet or rolling pin until 2cm thick. Repeat with the rest of the chicken breasts.
  • In a medium bowl, mix breadcrumbs and parmesan. In another medium bowl, whisk together egg and milk. Season flour on a plate.
  • Coat the chicken in flour, egg, and breadcrumb mixture, pressing firmly. Chill in the fridge for 15 minutes on a tray.
  • Preheat the air fryer at 200°C for 3 minutes. Coat the chicken with olive oil spray. Place half of the chicken in a single layer in the air fryer basket. Cook for 12 minutes, flipping halfway, until golden and cooked through. Keep warm by covering with foil on a plate. Repeat with the rest of the chicken.
  • Halve the two chicken schnitzels. Place half of the ham on two chicken halves and half of the pizza cheese on the other two. Put them back in the air fryer and cook for 3 minutes until the cheese is melted. Press the schnitzel halves together to create a 'toastie'. Repeat with the rest of the schnitzels, ham, and pizza cheese.
  • Enjoy the "toasties" topped with chutney.
