Crispy, juicy buttery chicken bites with smoky paprika and tangy honey mustard dip. Swap dill for parsley or chives if preferred.
Ingredients:
  • 125g (2 1/2 cups) panko breadcrumbs
  • 60g (3/4 cup) shredded parmesan
  • 10.00 gm smoked paprika
  • 185g butter, melted
  • 500g chicken breast fillets, cut into 4cm pieces
  • 125ml (1/2 cup) honey
  • 17.70 gm Dijon mustard
  • 3 tsp red wine vinegar
  • 20.00 ml chopped fresh dill
  • ½ tsp mustard powder (optional)
Instructions:
  • In a shallow bowl, mix the breadcrumbs, parmesan, and paprika. Season with salt and pepper. Melt the butter in another shallow bowl. Dip a chicken piece in the butter, allowing excess to drip off. Coat the chicken in the breadcrumb mixture, pressing firmly. Double coat the chicken by dipping again in the butter and breadcrumbs. Place on a plate and repeat with the rest of the chicken pieces. Chill in the fridge for 30 minutes.
  • Arrange half of the chicken bites in the air fryer basket, ensuring they are spaced apart. Lightly spray with oil and air fry at 180C for 12 minutes or until crispy and fully cooked. Repeat with the remaining chicken bites.
  • To prepare the honey mustard sauce, warm the honey in a microwave-safe jug for 30-60 seconds. Then, mix in the Dijon mustard, vinegar, dill, and optional mustard powder. Stir thoroughly to combine.
  • Serve the chicken bites drizzled with the honey mustard sauce.
