Air fryer chicken schnitzel recipe

Coat chicken in panko-parmesan blend, air fry 15 mins for perfect schnitzel every time!
Ingredients:
  • 4 x 180g RSPCA Approved Chicken Breast Fillets
  • 100g (2 cups) panko breadcrumbs
  • 20g (1/4 cup) finely grated parmesan cheese
  • 1 egg, lightly whisked
  • 41.20 gm milk
  • 50g (1/3 cup) plain flour
  • Olive oil spray
  • Lemon wedges, to serve
Instructions:
  • Sandwich a chicken breast between two sheets of cling wrap and gently pound with a mallet or rolling pin until 2cm thick. Repeat with the remaining chicken breasts.
  • In a medium bowl, mix breadcrumbs and parmesan. In another medium bowl, whisk egg and milk together. Season flour on a plate.
  • Coat the chicken in flour, then egg, and finally breadcrumb mixture, pressing gently to adhere. Chill in the fridge for 15 minutes on a tray.
  • Begin by preheating the air fryer to 200°C. Coat the chicken with olive oil spray. Place half of the chicken in a single layer in the air fryer basket. Cook for 12 minutes, flipping halfway, until golden and cooked. Transfer to a foil-covered plate to keep warm. Repeat with the rest of the chicken.
  • Garnish the schnitzel with lemon wedges before serving.
