Air fryer Parmentier potatoes recipe

Air fryer Parmentier potatoes: Crispy, garlicky cubes of French flair, cooked to golden perfection in half the time.
Ingredients:
  • 1kg floury potatoes (such as Sebago)
  • 60ml (1/4 cup) olive oil
  • 20.00 ml fresh thyme leaves, plus extra small sprigs to serve
Instructions:
  • Peel and dice the potatoes into 2cm cubes. In a large bowl, toss the potato cubes with 2 tablespoons of oil until coated. Transfer to the air fryer basket without washing the bowl. Air fry at 180C for 15 minutes, pausing twice to stir and toss the potatoes for even cooking.
  • Combine garlic, thyme, and remaining 1 tablespoon of oil in the bowl with the potato. Toss to coat evenly. Air fry half of the potatoes at 200C for 10-15 minutes until crispy and golden, pausing to toss occasionally. Transfer to a tray and repeat with the rest of the potatoes.
  • To enjoy, place the cooked potatoes back in the air fryer and heat at 200C for 10 minutes, pausing to toss halfway, until they are hot and crispy. Then, transfer them to a serving bowl, season with salt, and garnish with additional thyme leaves.
