Air fryer pecan-crusted trout: Quick, easy dinner ready in 20 minutes. Perfect with veggies and rice.
Ingredients:
  • 2/3 cup finely chopped pecans
  • 1 teaspoon dried rosemary, crushed
  • 1/2 teaspoon salt
  • 2 tablespoons flour
  • 4 (4-ounces) rainbow trout fillets, thawed iffrozen, skinned if desired
  • 2 teaspoon pure maple syrup
  • Lemon wedges, for serving
Instructions:
  • Preheat air fryer to a sizzling 400°F (200°C).
  • Combine pecans, rosemary, and salt in one dish. Place flour in another dish. In a third dish, gently beat the egg. Dredge the fillets in flour, then egg, and finally the pecan mixture, ensuring they are evenly coated.
  • Arrange the fillets with the pecan-coating facing up on parchment paper. Carefully transfer the fish on parchment to the air fryer basket, working in batches if necessary.
  • Cook the fish until it easily flakes with a fork and reaches an internal temperature of 145 degrees F (62 degrees C, about 7 to 8 minutes).
  • Drizzle fillets generously with maple syrup and garnish with fresh lemon wedges before serving.
